Noma pops up at Claridges for the Olympics

The world’s most in-demand chef looks set to create the world’s most in-demand pop-up restaurant, when Rene Redzepi (pictured), head chef of Noma in Copenhagen, creates a pop-up version of the world’s number one restaurant in London’s Claridge’s hotel.

In a special event for the London 2012 Olympics, the Danish chef will be creating a five course menu at Claridge’s which will reflect his signature flavours and dishes from Noma, using local, seasonal British ingredients. The announcement comes days after Redzepi’s inclusion in Time magazine’s 100 Most Influential People in the World.

“A Taste of Noma at Claridge’s” will be available for both lunch and dinner in Claridge’s Ballroom from 28 July to 6 August 2012, and unlike some celebrity pop-ups, Redzepi will be in the kitchen every day, along with a team of chefs from his multi-award winning Copenhagen base.

Speaking about the venture, Redzepi said: “We are excited about the opportunity to be part of the celebration of the Olympic Games in London and to work closely with the team at Claridge’s. It is a different set-up from our home field, but we look forward to exploring the bounty of a different part of the world.” Part of the Noma philosophy is to use ingredients locally to the restaurant’s Copenhagen home, so it will be a culinary challenge for Redzepi to swap Scandinavian ingredients with British alternatives.

It is the first time the chef has operated outside of Copenhagen in this way, and the General Manager of Claridge’s, Thomas Kochs, is excited at the prospect: “The arrival of Rene and his team marks a true milestone in Claridge’s culinary history, especially during such an exciting time in the capital. As London welcomes the best of the best from around the globe this summer, we are proud to make our contribution by bringing the world’s best restaurant to Claridge’s!”
